Lemon Coconut Cookies

So here it is! My favorite coffee time treat! These cookies are reminiscent in flavor of a traditional macaroon, but 100% guilt free.


These cookies are grain free, dairy free, egg free, and sugar free.



*CHIA SEED EGG:

1 tbsp chia seeds + 3 tbsp hot water

(This recipe calls for 2 chia seed eggs: 2 tbsp chia seeds + 6 tbsp hot water)


Tip:

You can use ground chia seeds instead of whole chia seeds when making your egg. This will work just as well but provide a smoother texture in your baking.


Note:

The cookies can be delicate when they first come out of the oven. I find it helpful to let them cool completely before eating (this is so hard to do!). This gives the chia seed egg a chance to set and do a proper job of holding all the yumminess together!
